Coutume Update

A very fine espresso in a hard to photograph black cup from Coutume, complete with carafe of water.The last time I visited Coutume, the (relatively) old, established player in Paris’ third-wave coffee scene, I arrived just before closing on a day when the espresso machine had just been repaired, having been broken all day. It was also my last stop before heading back home on the Eurostar.

This time, in a nice piece of symmetry, I decided to make it the first stop of my visit. So, having arrived from Nantes, I turned up just before closing on a day when the espresso machine had just been repaired, having been broken all day … Some things never change!

I was there at the invitation of Connor, one of Coutume’s baristas, who had been following my progress around France. He made me a lovely cup of an Ethiopian Nekisse through the V60, a rich, complex brew which matured as it cooled. While I drank it, I sat (out of the way) at the bar at the front and chatted with Connor about all the things that had changed since my last visit.

Vice Coffee Inc.

Vice Coffee Inc., with "Vice" in script and "Coffee Inc." in capsMy (far too short) weekend in Dublin accidentally turned into a very 3FE-dominated affair.  As well as 3FE itself, my second stop, Brother Hubbard, uses 3FE and so, as it turns out, does my third stop, Vice Coffee Inc. Or at least it did when I was there: Vice regularly rotates its roasters and, during my visit, 3FE was sharing the grinders with London’s Square Mile.

Vice is a coffee bar situated inside The Twisted Pepper on Middle Abbey Street, just north of the river. Don’t be put off by the exterior, where it looks as if Vice is no more than a small collection of wooden tables in the lobby, served by a La Marzocco espresso machine. I actually walked past once because the La Marzocco was clearly not in use, but the second time I ventured inside and discovered that Vice has actually installed itself in the bar at the back.

Vice serves both espresso, from a Nuova Simonelli behind the counter, and filter coffee through Aeropress or V60 from a little filter station at the opposite end of the counter. There’s also tea from Cardiff’s Waterloo Tea. And cake, of course. And toasted sandwiches.

Brother Hubbard

The Brother Hubbard logo: 'brother hubbard' in a large, white circle.Brother Hubbard, on Capel Street, just north of the River Liffey, was on my list even before I set off for Dublin. However, when 3FE recommended it as “the place to go for food as well as coffee”, that settled the question of where to meet my friend Sarah for Sunday morning brunch.

Brother Hubbard is as much about the food as it is about the coffee, if not more so (although Brother Hubbard may disagree). Serving breakfast and lunch on weekdays, and brunch at the weekends, it’s a cosy, friendly, welcoming place, the ideal spot to start my Sunday morning. The food is inventive, with a Middle-eastern twist, and the menu changes on a seasonal basis. The coffee menu (all espresso-based) is refreshingly simple. It dispenses with descriptions of beans, sizes and types of drink, merely stating that the coffee’s served “as you like it”.

Brother Hubbard has recently expanded into the shop next door, which has been christened “Little Brother”. I only managed to stick my nose in through the dividing doorway, but I get the impression that it’s more the coffee-shop side of the business and clearly one for my next visit to Dublin.

October 2019: I finally made it back to Brother Hubbard, now Brother Hubbard North, which is a vastly expanded operation, which stays open in the evenings five days a week for dinner.

Bewley’s Grafton Street Café

An espresso from Bewley's on Grafton Street. One could argue that no trip to Dublin is complete without a visit to the iconic Bewley’s Café on Grafton Street, which first opened its doors in 1927. It’s one of those names that is associated with the great cafés of the past (such as Café de Flore), and certainly one I had heard of long before my Coffee Spot days. With its gorgeous façade, sumptuous interior, lovely artwork and full table service, it’s definitely an experience. As regular readers will know, it’s exactly the sort of experience that I like (for example, another Parisian favourite, Angelina, springs to mind).

It helps that the coffee’s not too bad either. All roasted on the premises, Bewley’s offers a standard espresso-based menu, along with the option of a cafetiere for one or two, plus tea, hot chocolate and soft drinks. There’s a very tempting (and large) range of cakes and pastries, plus full breakfast, lunch and dinner menus. There’s also a range of wine, cocktails, beer and cider.

If that wasn’t enough, there’s an intimate little theatre on the top floor, which puts on one-act plays at lunchtime (complete with optional light lunch) and cabaret, jazz and comedy in the evenings.

3FE Grand Canal Street

The 3FE logo, simply the letters 3fE in cursive script, with the 3 a mirror image of the E3FE, short for Third Floor Espresso, is, disappointingly, on the ground floor of its building on Dublin’s Grand Canal Street. However, that’s pretty much the only disappointing thing about it. 3FE was the one place that everyone said I should visit in Dublin, its fame having spread even to Philadelphia, where barista Willa, who works in Menagerie Coffee/Elixr, recommended it!

3FE is both roaster and coffee shop, the roastery being down by the ferry terminal. 3FE roasts for its own use, as well as supplying other shops in Dublin and beyond. Like many small-batch roasters, 3FE regularly rotates what it’s roasting and serves whatever it has roasted/in stock at the moment. In an innovative move, 3FE only serves single-origin beans, offering a choice of three, which can be had as espresso or filter.

This makes for a refreshing coffee menu, since it only lists the beans, not the brew methods, thus shifting the focus back onto what’s important, the coffee itself. That’s not to say 3FE isn’t as obsessed as the next coffee geek about brew methods, with a new Mahlkönig EK-43 grinder and one of the first Victoria Arduino Black Eagle espresso machines, installed the day before my visit!

Angelina, rue de Rivoli

The Mont Blanc from AngelinaAngelina is something of a Paris institution, a grand Salon du Thé which exudes class, even more so than the venerable Café de Flore. From its shop on the rue de Rivoli, on the north edge of the Tuileries Gardens, it’s been serving the folk of Paris (and its fair share of visitors too: judging by the accents, faces and amount of English being spoken, Angelina is a major tourist draw) with exquisite cakes, artery-clogging hot chocolate and fine coffee since 1903.

While you might go to Café de Flore or its neighbour, Les Deux Magots, for the coffee, the people watching or the general ambience, with Angelina, you are definitely paying for the elegant surroundings and the (quite possibly literally) to-die-for patisserie such as the legendary Mont Blanc or the signature hot chocolate, l’Africain.

If you can’t get to the rue de Rivoli (or can’t get in!) there are other branches around Paris (plus one in Lyon and nine in Japan!). Alternatively, rue de Rivoli has a takeaway counter (useful for the budget-conscious). I’ve only tried the branch in the Louvre, which, while serving the same excellent fare, doesn’t quite have the same class as the rue de Rivoli original.

Coutume

A very fine espresso in a hard to photograph black cup from Coutume, complete with carafe of water.Coutume is something of an old hand in the (relatively new) Parisian third-wave coffee scene. On the left bank, on the relatively untrodden (by tourists, at least) rue de Babylone, it is both a roaster (which supplies the likes of Black Market) and a café in its own right. Of the three third-wave cafés I visited on my trip to Paris in May, character-wise it sits between Ten Belles, which felt as if it had been lifted straight out of Soho, and Black Market, which felt like a little French café/bar.

On the one hand, Coutume felt undeniably French, particular since it was the only one of the three to offer table service. It also seemed to have the most local custom. On the other hand, if I closed my ears and took down the menus, it too could have been lifted straight out of Soho, with its tiled counters and bare, undecorated walls.

Not that this is any criticism; of the three, I preferred the coffee at Coutume, although it was a close-run thing with Black Market. I also loved the atmosphere, it being a great place to drink great coffee.

Café de Flore

Classic Cafe de Flore cup, with green writing on white china, from 2009.Café de Flore is a grand café in the old style, which, together with near neighbour Les Deux Magots, is a fixture of Paris’ Left Bank. Situated on the Boulevard Saint-Germain, Café de Flore dates back to 1885 and provides a taste of café life from early to mid-20th Century Paris. Popular with tourists and locals alike, it is, for me, part of something quintessentially Parisian, the stereo-typical grand café par excellence. Fortunately for me, Café de Flore actually lives up to my (potentially exaggerated) expectations.

The coffee is good and there’s a range of food from breakfast through lunch to dinner, along with a range of pastries. If coffee’s not your thing, there’s tea, hot chocolate, soft drinks and a very impressive array of drinks from the bar, including a whole page on the menu dedicated to champagne (this is, after all, France). The only potential downside is the price: for a city with a reputation for being on the expensive side, expect to pay twice as much in Café de Flore as you would elsewhere in Paris. Of course, you’re paying for the experience and that little touch of class, which, for me, is well worth it!

Black Market

Black Market, proudly serving coffee from Parisian roasters, Coutume.Black Market is probably my favourite of the third-wave coffee places that I visited in my recent (and far too short) trip to Paris. It effortless marries third-wave coffee with the look and feel of a traditional French bar/café in the streets of the 18th Arrondissement. After my recent rant about attitudes to Parisian coffee, it’s good to see somewhere combining new and old so well.

The coffee, from Parisian roasters Coutume, is made with as much love and care as any I’ve seen and the menu is commendably short, with just espresso, café long (espresso with hot water; think Americano/long black), noisette (espresso with a small amount of milk; think cortado/machiatto) and café au lait (espresso with more milk; think small cappuccino/flat white).

The interior is similarly uncomplicated, with wooden furniture blended with plain walls and a tiled floor. I really enjoyed it, although some might find the music annoying. Although mellow, it was quite loud when I was there. On the other hand, apart from the barista, I had the place to myself for a large part of my stay, so it added something to the atmosphere and didn’t feel that intrusive.

February 2014: Sadly Black Market has closed, which is a real shame. However, the owners, Youssef & Baptiste, have now opened Fragments, Paris, their new venture in the La Marais.

Good Coffee in Paris?

Un Cafe at the legendary Cafe de FloreI worry when I hear people say that they can’t find good coffee in Paris, since I’ve never had a problem in that respect. After all, Paris has a café (and coffee) culture that in many ways long predates that of the UK or the US. What I suspect I’m hearing is “I can’t find coffee that I like” or “I can’t find the coffee that I’m used to”. The simple fact is “coffee I like/am used to” isn’t necessarily synonymous with “good coffee”.

So, I’m going to use this Saturday Supplement to try something new for the Coffee Spot, a discussion piece, looking at the coffee scene in Paris as a matter of taste and perspective. Now, I’ll be the first to admit that while you can get good coffee in Paris, you can also get bad coffee, often shockingly bad coffee. However, Paris has a wide and varied coffee scene, from the little bars with an espresso machine, through the bistros and pavement cafés all the way to the grand cafés of the Left Bank and the upmarket Salons de Thé. And, recently added to the mix, third-wave coffee.
