Coffee Exchange

That I discovered it is entirely down to Allison, who with fiance Chris, runs Broke and Travelling. Having enticed me down from Boston on a day-trip, Allison acted as my guide, introducing me to Dave’s Coffee, The Shop and the subject of today’s Coffee Spot, Coffee Exchange.

Coffee Exchange is an old-hand when it comes to Providence’s growing speciality coffee scene. Founded in 1984, it can be said to have inspired a generation (at least) of Providence coffee-drinkers. Coffee shop, roaster and retailer all in one, Coffee Exchange operates out of its busy store on Wickenden Street, roasting all its own coffee using a pair of Deirich roasters conveniently located at the back of the store.

In look and feel, as well as in the coffee it roasts, Coffee Exchange seems a little old school. Dark roasts and blends predominate, although single-origins and lighter roasts are there for those who look. Coffee Exchange is also a pioneer, having championed strong ties between roasters, green bean importers and coffee growers long before it became fashionable. Indeed, Coffee Exchange co-owner Bill Fishbein founded both Coffee Kids and The Coffee Trust.

Café Zee

The roaster can be seen at the back through the door.Café Zee is a recent addition to Ealing’s coffee scene, joining such established players as Munson’s and the Electric Coffee Company. It arrived in July 2014, opening a few weeks before Artisan, which is just across the road on the busy New Broadway, a few minutes’ walk from the station.

From the street, the sumptuously-appointed Café Zee catches the eye and it looks even better inside. Inspired by the Art Deco cafés of Latin America, it really does have a beautifully-done interior, the sort of elegance I’m used to seeing in the likes of Notes on St Martin’s Lane or Paris’ Angelina.

The other thing that catches the eye is the bold pronouncements of artisan coffee, roasted on the premises, which, I must admit, threw me a little. This kind of elegance is not something I normally associate with a café-cum-roaster (somewhere like Glasgow’s Papercup Coffee Company more readily springs to mind). However, head right to the back of the café and there you’ll find a modest 6kg Giesen roaster, surrounded by sacks of green beans.

However, there’s a lot more to Café Zee than mere elegance and freshly-roasted coffee, including a pretty decent menu and an exceptional cake selection!

Brooklyn Roasting Company, Jay Street

The fully developed crema will soon dissipate.At the bottom of Jay Street, which runs alongside the Manhattan Bridge (my usual gateway into Brooklyn) the Brooklyn Roasting Company makes a great first stop when exploring the area (it’s also convenient for the York Street metro stop on the F line). Occupying the ground floor of a sprawling five-storey building, the Brooklyn Roasting Company is an amazing spot. Some coffee shops go to great lengths to achieve that stripped-back, industrial look; the Brooklyn Roasting Company simply moved into a 19th century stables down by the East River and, voila, there you have it.

There’s a wide range of coffee on offer, with a standard espresso bar at one end of the building and a more experimental, speciality lab at the other, so all tastes should be catered for. As well as being a wonderful space to drink coffee, Jay Street is also headquarters of the Brooklyn Roasting Company, which means all the roasting gets done here. So, if that’s your sort of thing, you can sit in the far corner, by the lab, watching the green beans being hoovered into the 35kg Loring roaster and enjoying the spectacle of the freshly-roasted beans pouring out some 12 minutes later.

Café Lomi

An espresso is a classic earthenware Inker cup from Café LomiI don’t know what the French for “hipster” is, but “Café Lomi” might be a fairly good stab. It’s the closest I’ve come in Paris to what I think of as a hipster café, right down to the undecorated walls, exposed air-conditioning conduits and bare bulbs hanging from the ceiling. The clientele was pretty hipster too; for example, I wasn’t the only one taking pictures of his coffee and every other person was on a laptop, Macs outnumbering Windows two-to-one. The clinching argument? It carries Caffeine Magazine. I rest my case…

Putting pointless classification to one side, Café Lomi is a café/roaster in the northern reaches of Paris. Café-roasters seem to be much more common in Paris than they are in the UK; of the limited number of third-wave Parisian cafés I’ve visited, Lomi is the third, joining La Caféothèque and Coutume when it opened in 2012. In Lomi’s case, it is a café at the front, and a roaster at the back, where the chunky Giesen turns out espresso blends and single origins both for use in Lomi and to supply other cafés and restaurants. Sadly you can’t wander into the back and see the roaster in action though…

Roasting Green Beans at Home

As well as being a lovely café, Finca also roasts all its own coffee using a bright-red, 1kg Genesis CBR-1200, which sits proudly on the counter. While I was there, the owner, Don, explained how he’d started roasting at home in a wok. As a parting gift, he gave me 4oz of green beans (Finca Muxbal from Mexico), plus a set of instructions for roasting them in Finca’s CBR-1200. Perhaps more relevant to me, the instructions also included a section roasting at home in a wok.

So, two weeks into January, the Coffee Spot Awards safely out of the way, I decided to give it a go. After reading and re-reading the instructions (that’s got to be a first for me), I set up the kitchen, opened all the windows and kept the door to living room (where the smoke alarm lives) firmly shut. As it turned out, there wasn’t much smoke, but it would have been enough to set the alarm off and I’m glad I ventilated the room. 30 minutes after roasting, a pleasant, slightly smoky smell still lingered in the kitchen.

Finca

The store front of Finca on Great Western Road, Dorchester, the bulbs inside glowing in the fading evening light.Finca is Dorchester’s second speciality coffee shop, coming after the outstanding Number 35 Coffee House & Kitchen. One might think it a little unfair that Dorchester has two such places, when many struggle to have even one, but this is how it is.

Finca opened last summer and joins the select breed of coffee-shop-cum-roaster. While the majority are quite big operations, with 10-15 kg roasters, with their own dedicated area of a large building (North Berwick’s Steampunk Coffee springs to mind), Finca has more in common with Glasgow’s Papercup Coffee Company. Both are small coffee shops which roast on-site and, while in the case of Papercup, the roasting is done at the back, at Finca, the roaster, a bright-red, 1 kg Genesis CBR-1200, sits proudly on the counter-top for all to see.

Finca has a stock of three green beans, two standard and one guest, and it roasts after hours, one or two evenings a week. Roaster aside, Finca is a friendly, neighbourhood coffee shop, although it boasts a decent food offering for such a small place, including cake, soup and toasted sandwiches, all prepared in the small kitchen at the back. It’s even got a dedicated toast menu!

Steampunk Coffee

After the recent appearances by LeedsNorth Star and Manchester’s Ancoats, we now head north of the border to North Berwick and Steampunk Coffee. I wrote about Steampunk’s fantastic café/roastery, The Warehouse, towards the end of last year, but that was in its guise as a Coffee Spot. Today, I’m focusing on Steampunk in its role as a roaster, which is how I first came across it earlier in the year when I visited Edinburgh’s Machina Espresso.

The roasting side of Steampunk is firmly on display when you enter The Warehouse. Tucked away to the right (behind the Christmas tree when I visited) there’s a whole corner dedicated to Steampunk’s 12 kg Probat roaster, which is usually in action on Tuesdays and Wednesdays, should you wish to see it on the go. I, of course, was there on a Sunday…

Steampunk roasts a number of espresso blends, the main ones being the Tiger Stripes and Velos blends, while there are around 10 single origins, of which four or so are being roasted/are available at any one time.

November 2015: I ran into the Steampunk guys at Cup North, and discovered that Steampunk now only roasts single-origins.

Ancoats

Hot on the heels of North Star Micro Roasters comes, from the other side of the Pennines, Manchester’s Ancoats Coffee Company.

Back in August, as part of my Manchester tour for Caffeine Magazine, I popped in to see Jamie, the man behind Ancoats. Appropriately enough, you can find Jamie in the birth-place of Manchester’s industrial revolution, the Ancoats district, after which the company takes its name. Just to the east of the city centre, it’s a remarkably accessible part of town, although it does look like it’s come straight out of the famous Life on Mars TV series, which was set in Manchester in the 1970s.

Jamie set up Ancoats in October 2013 and began trading in January 2014, so he’s about to celebrate Ancoats first birthday. Roasting on a 6 kg Giesen, Ancoats produces a seasonal espresso blend (appropriately enough, called Warehouse City), an excellent decaf and a number of single-origin beans. North Star Micro Roasters

Today we’re in Leeds, at North Star Micro Roasters, who have been going for just over a year now. I went to see Krag and Ellis, the guys behind North Star, back in the summer as part of my Coffee Spot tour of Leeds.

Roasting with a 5 kg Toper in an industrial estate just north of Leeds, North Star is that city’s first micro-roaster, which is a quite a surprise considering the strong coffee scene in the city and in the nearby Harrogate and York, which, together with Leeds, make up the Yorkshire Coffee Triangle. There’s also a strong roasting presence with the likes of Holmfirth’s Grumpy Mule, while in Harrogate, Falcon Speciality is one of the country’s leading green bean importers.

However, Leeds’ wait for a speciality coffee roaster to call its very own ended last October when North Star started production. There are two espresso blends, the seasonal Czar Street, which changes three to four times a year, and the Dark Arches blend. Added to this are around eight single-origins, roasted primarily for filter, but with some roasted for espresso.

August 2017: North Star moved the roastery to Leeds Dock last year, opening a cafe in the space next door in July this year. Expect an update soon!

Steampunk, The Warehouse

Thumbnail - Steampunk (DSC_6712t)I first discovered Steampunk as a roaster when I visited Machina Espresso in Edinburgh in April 2014.

I tried the Tiger Stripes blend and was so impressed that I bought a bag to take home with me. Back then I only knew of Steampunk as a roaster and didn’t realise that it had recently opened The Warehouse, a large café in its home town of North Berwick, just along the coast from Edinburgh.

So, on my next trip to Edinburgh, I made a point of heading east to North Berwick. I’m pleased to report that I was as delighted by The Warehouse as I was by that first espresso that I had at Machina Espresso!

Spread over two floors of a lovely old building, which retains many of its original features, The Warehouse is an ideal space for a roaster-cum-café (I’ve covered the roasting side of Steampunk in a separate Saturday Supplement). There’s a large, exterior courtyard, which, on the sunny day I was there, saw good use, while downstairs you share space with both roastery and counter. Upstairs, there’s table service and a full food menu, which is all prepared in the kitchen in the corner.
